Features: SUGARPRO- D is "A specific combination of thermostable enzymes that efficiently reduces the Dextran in mix juice & syrup streams & improves the yield". This enzyme is an endo-dextranase capable of randomly hydrolysing the interior alpha-1- 6-glucosidic linkages of dextran and its degradation products. This activity rapidly reduces the viscosity of dextran solutions. The initial hydrolysis leads to produce soluble polysaccharides and oligosaccharides of varying lengths. Prolonged hydrolysis with SUGARPRO- D dextranase results in the formation of glucose and lower levels of isomaltose and isomaltotriose.
Performance Benefits: It acts on the cane sugar juice with wide range of sucrose content (7-15%W/W) and pH (5-7), it have high specificity for inner bonds of dextran polymers as compared to end sugar unit thereby making it more effective in cleaving the polymer and also free from invertase activity, it is eco-friendly, bio-degradable and its application reduces chemical consumption
